These no-bake Lemon Turmeric Energy Bites are naturally sweetened with dates and packed with protein, fiber, and healthy fats. They're the perfect grab-and-go snack for busy days or a quick afternoon pick-me-up.

Ingredients
- 1¾ cups old-fashioned rolled oats
- 1 packed cup soft Medjool dates, pitted
- 1 scoop vanilla protein powder
- 2 tbsp chia seeds
- 2 tbsp hemp seeds
- Zest of 1 lemon
- 3 tbsp freshly squeezed lemon juice
- ¾ tsp ground turmeric
- ¼ tsp ground ginger
- ¼ tsp ground cinnamon
- 1 tsp pure vanilla extract
For Rolling
- ½ cup unsweetened shredded coconut, hemp seeds, or sesame seeds
Instructions
- Add all of the ingredients, except the rolling ones, to a food processor. Process until the mixture is well combined and the dates are fully broken down.
- Test the mixture by squeezing a small amount between your fingers. It should hold together easily. If it feels too dry, add water 1–2 teaspoons at a time, processing after each addition until the mixture reaches a sticky consistency.
- Scoop about 2 tablespoons of the mixture and roll it firmly between your palms to form a ball.
- Roll each energy bite in your choice of shredded coconut, hemp seeds, or sesame seeds until evenly coated.
- Repeat with the remaining mixture.
Storage
- Refrigerator: Store in an airtight container for up to 4 days.
- Freezer: Freeze in a sealed container for up to 3 months. Let thaw for a few minutes before enjoying.
Recipe Tips
- If your Medjool dates are dry, soak them in warm water for 5–10 minutes before processing, then drain well.
- For a brighter lemon flavour, add a little extra lemon zest.
- Use a high-quality vanilla protein powder that you enjoy, as it contributes significantly to the overall flavour.
