Lemon Energy Bites

These no-bake Lemon Turmeric Energy Bites are naturally sweetened with dates and packed with protein, fiber, and healthy fats. They're the perfect grab-and-go snack for busy days or a quick afternoon pick-me-up.

Ingredients

  • 1¾ cups old-fashioned rolled oats
  • 1 packed cup soft Medjool dates, pitted
  • 1 scoop vanilla protein powder
  • 2 tbsp chia seeds
  • 2 tbsp hemp seeds
  • Zest of 1 lemon
  • 3 tbsp freshly squeezed lemon juice
  • ¾ tsp ground turmeric
  • ¼ tsp ground ginger
  • ¼ tsp ground cinnamon
  • 1 tsp pure vanilla extract

For Rolling

  • ½ cup unsweetened shredded coconut, hemp seeds, or sesame seeds

Instructions

  1. Add all of the ingredients, except the rolling ones, to a food processor. Process until the mixture is well combined and the dates are fully broken down.
  2. Test the mixture by squeezing a small amount between your fingers. It should hold together easily. If it feels too dry, add water 1–2 teaspoons at a time, processing after each addition until the mixture reaches a sticky consistency.
  3. Scoop about 2 tablespoons of the mixture and roll it firmly between your palms to form a ball.
  4. Roll each energy bite in your choice of shredded coconut, hemp seeds, or sesame seeds until evenly coated.
  5. Repeat with the remaining mixture.

Storage

  • Refrigerator: Store in an airtight container for up to 4 days.
  • Freezer: Freeze in a sealed container for up to 3 months. Let thaw for a few minutes before enjoying.

Recipe Tips

  • If your Medjool dates are dry, soak them in warm water for 5–10 minutes before processing, then drain well.
  • For a brighter lemon flavour, add a little extra lemon zest.
  • Use a high-quality vanilla protein powder that you enjoy, as it contributes significantly to the overall flavour.
