Red Lentil Tortilla (2-Ingredient)

Ingredients

  • 1 cup red lentils (dry)

  • 2 cups water

  • (Optional: pinch of salt)

Instructions

  1. Soak the lentils
    Rinse the red lentils well. Soak them in plenty of water for at least 3–4 hours or overnight.

  2. Blend
    Transfer the soaked lentils and water to a blender. Blend until completely smooth—similar to crêpe batter. Let rest 5–10 minutes to slightly thicken.

  3. Cook
    Heat a non-stick pan over medium heat. 
    Pour about ¼–⅓ cup batter into the pan and spread into a thin circle.

  4. Flip
    Cook for 1½–2 minutes until the edges lift and the surface looks set. Flip and cook another 1 minute.

  5. Repeat
    Continue with remaining batter, stacking tortillas under a clean towel to keep warm.

Serving ideas

  • Use like a wrap for salads, hummus, or roasted veggies

  • Crisp slightly and use as a flatbread

  • Cut into triangles and toast for protein-rich “chips”
